I have been a Cakewalk SONAR Professional user for about a year now.
 
I am looking at Windows tablets that have the minimum RAM (4GB) as delineated on your specs page for Cakewalk versions.
 
Several are using Win 8.1 and Win 10.
 
While some of the newest tablets are quite powerful I am looking to do two main things:
 
1. Stay immersed in the Cakewalk interface wherever I go.
 
2. Only "sketch" with an audio editor when mobile, preferably a Cakewalk audio editor (Music Creator 7?, Music Creator LE?, SONAR LE?,...older versions of Cakewalk?).  
 
Any comments would be appreciated.

Should work fine as long as the tablet meets the minimum spec. I use a surface pro all the time with Sonar Platinum but it is the i7 version so has plenty of power but I did install on a small 7 inch cheap HP tablet and it worked OK but the small screen made it hard to hit some of the buttons.

If you are using a tablet I recommend using Windows 10 and the newest versions of SONAR or Home Studio since they are much better optimized for touch and onboard audio. This months update has several significant optimizations for touch support. The Windows 10 WASAPI optimizations we did recently will also support low latency audio playback from such devices so the in the box experience will be a lot better than older versions. 
Also the Lenses feature can be useful to reduce real estate clutter.

If you saw Noel's recent presentation at Microsoft, he's using a Surface Pro. Probably not the 4GB entry-level model, though.

I run Home Studio on a laptop with 3 GB RAM, 2.4 1 core processor. Works just fine.

The new surfaces are even better since they additionally support Dial screen placement out of the box, in case you want to use the surface dial. They also have significantly better battery life with the I5 versions.

I've had a top of the line Surface Pro 3 for a few years now.  More then enough power to run Sonar Plat.
 
Working on that form-factor drove me bonkers.   Only one USB drove me bonkers.
 
Switched and an Asus Zenbook with Thunderbolt for an interface and more then enough USBs for my needs.
 
Could I ever see going back to a tablet?   Yeah, but they need to give 'em more expansion slots.

This is why I stay with my netbook and laptops too. I need at least 3 USB ports for my live rig. 

They deliberately dont add extra ports to keep them light and compact. You can always get a USB3 expander if you need more ports. Compared to any tablet/laptop hybrid I've owned the surface pro is the most robust and its frequently updated unlike those from some other companies.
