OK so I have a brand spanking new computer with Windows 10...Do I allow updates?  I rarely go online with this computer, just to update software.

First, make sure you have Update to inform you but let you decide if you want to download and install the updates. This way you will get notified when updates are available, you can look at the updates, read about them and decide what to do.
This is how I do it.

For example: Let's say I get notified that there is a new Chipset Driver Update. In this case, I have never had issues with my MOBO, Graphics Card or any Peripheral. I will simply leave this driver as is. Obviously this is just a simple example. 

But you do want to update Windows components that are needed and that are fixes to issues you are having.

Personally, I do not use my computer for anything other than music and so I rarely do updates unless it has to do with fixing something that is affecting my work.

If it is not broken, don't fix it!

What I have done is enabled Windows updates but disabled the automatic updating of Windows hardware drivers.

Microsoft, from time to time, replaces perfectly good drivers with Microsoft's generic drivers. This can cause issues - especially with audio interface or graphic drivers. 

For these I prefer to head to the various manufacturer's websites and update hardware drivers manually.

I've had Win 10 since before it was issued to the public, as I get pre-release "Insider" versions.  I've had no problems with any updates, but my hardware is fully Win 10 compatible.  
Many updates are for security.  I haven't experienced any "downgraded/older version" drivers.
 
The problem with a "not on line" system is when you do go on line to upgrade some DAW software or install some new, if you don't have the latest security updates you are at risk.
