iam currently using cubase, but thought about trying out sonar.
 
does it have a disable track function like cubase does or how do you handle or build a big template with it?
ive tried to search on youtube about this but there are not that much videos about sonar. atleast i couldnt find one which
is working with a bigger orchestral template.

I made this video a few years back but its still the same way

About disabled tracks, not really sure what you mean because im not too familiar with Cubase anymore.
You can freeze tracks to free up resources/CPU and im pretty sure that state is saved with Project Templates

in cubase you can disable a track and it will not be processed anymore. it doesnt take any cpu and ram in this state. all settings of the track are stored and when you re-enable it will be back with all its effects,routing etc.
 
for example in cubase i have a template with like 600 instrument tracks. all of them are disabled when i load up the template and i enable the tracks iam gonna use. this saves alot of time in the long run, and also studio one got this feature with version 3.2, so i wonder if sonar has something similar.

Sonar's equivalent is called "Archive". Each track has an Archive button. If you click on it, all the other controls within the track become disabled and the audio engine will ignore all audio and midi associated with the track. It also frees up some RAM. Clicking on it again restores it.

still i wonder about the ram usage, does it completely unload the instrument? iam mostly using kontakt5 and i wonder if it gets completely unloaded from ram with the library loaded inside. cubase does that, and so does studio one.
 
 

To completely unload an instrument SONAR has a separate disconnect function for each synth instance.
