Does rolling back a version make newer files unreadable?

No problems ... I'm just thinking ahead here, and wondering,
if I ever have a problem with a splat update and have to roll back,
will I be unable to open projects started in the newer version?

You should be fine although specific features only available in the newer version will not work.

Depends on how far back you go and the project. For example, if a project has patch points or aux tracks, it will not load in a version of SONAR that does not support the feature.
