Cakewalk sound centre is crying and laughing at the same time

Since I down loaded Kingston and Session pro cakewalk sound centre is not behaving it jams my song and is squealing. Can Sonar filter midi notes (low vel, above/below certain keys) real time for midi guitar?

Planning on playing my Fishman Triple Play equipped midi guitar for LIVE performance for keyboard parts.. but, concerned that it will play unwanted notes.. Can I deglitch realtime so that I can play only intended notes?..

Questions about mixing music with surround sound

I usually just mix my cakewalk songs in stereo and I do not think about surround sound much because I use stereo near field monitors to mix my music. But I have been wondering what it would be like to mix in surround sound. Can't I simulate surround sound in cakewalk and output it to stereo monitors..
