Using a cowbell instead of a crash to end a fill

Quantizing Audio..?

When I recorded electronic drums I could quantize them easily, since it was MIDI notes. Now that I'm recording a live acoustic set, I'm wondering about quantizing as audio. I really don't want to use drum audio tracks to trigger MIDI notes or samples or any of that. How does this work, in practice? ..

I looked at LANDR and whilst my mixes are not quite as loud as their's, it just seems their algorithm is about turning a -20dB LUFS to -10dB LUFS in one fowl swoop. Looking for some advice

Tonight I spent some time levelling some pre-recorded stems against pink noise. I normalised their peak value to 100% and then moved the faders until I could barely hear them or at all. Then I thought fine, now I have all the drums, synths and vocal samples levelled - how do I maintain their volume ..
