When does a soundcard use its converters?

If I am working on a project, a track on just a soft synth eg, Omnisphere, and I bounce that track down to audio within Sonar - is the soundcard doing that processing or is it all done within the DAW? Recording Stereo?

Is it better to record two tracks from two mics or use one stereo track to record two mics? like from a guitar amp.I think you get more control of the space between with two tracks but it seems to sound better in a stereo track.Just a bit lost on what to do.Peace!..

DVD to digital, how to?

I am cleaning up my studio a bit and I came across a DVD my son did of one of my band's practice sessions. I suspect I can get this into my DAW pc as I have Sony Vegas and google tells me I can open the VTS-01-0.IFO file with Vegas, maybe so, but I don't have much HD space left immediately available..
