MIDI Bounce vs Record to track

How to get a 1:1 recording when using real time record for MIDI?

The audio has less volume than the traditional way of: Tracks> Bounce to Tracks

The level of 'bounce to track' will be dependant on what options you have checked in the bounce dialogue. You can, for example, bypass the output fader level setting of the Kontakt instrument track by unchecking 'track automation'. If the Kontakt track fader is below 0db, the resulting bounced track will be louder than the realtime recorded track (which IS affected by the fader level) as in your example.
