Each kit you load will have certain sounds but not necessarily all the sounds you require. Also, in certain cases more than one sample is attached to a drum: even though you see only one snare there may be many samples/sounds assigned to that drum. For example, right-click the snare and you will see that there may in fact be a Rim shot attached to the snare but needs to be triggered by a different MIDI note. If you right-click and select the Rim you should be able to left-click on the snare and hear that sample. Brushes are usually not in a standard kit but SD3 comes with at least one brush kit as far as I know. You can assign -any- sample set to -any-drum. For example you could assign the Brushes to a Quad-pad (or whatever they call the thing to the left of the snare in the SD3 interface). Right-click any drum and you can "Load Instrument". Go to "2. Snares" and you may find an SL Groovy Kit Brushes Snares for example. I haven't explored all the kits but there are likely other brush kits somewhere.
