As 57Gregy said: download the instrument definition file from
http://www.cakewalknet.com/index.php?option=com_content&task=view&id=21&Itemid=48. There is one for the S80.
Then go to Options-Instruments
Press the Define button
Press the Import button
Find the INS file you downloaded earlier and select it
Press close
On the Assign Instruments Dialog, select each Output Channel on your MIDI interface and assign it to the S80.
Then press close and you're done.
Now when you go to select a patch, you'll get the S80 patches. You may also have to select a bank since the S80 probably has multiple banks of patches.
