The drum map will define what appears in the PRV. Not sure about staff view.
You can create maps, or modify existing ones. There may already be a map for your potential drum set in the presets. Check the list.
As for USB vs MIDI, I have not noticed a difference.
My controller (edirol PCR-M50) can go either way, and I have tried both.
My e-drums(Alesis DM6) are USB only.
No issues either way.
How you monitor the audio output can make a difference, as far as latency, but that has nothing to do with your MIDI path.
Get the kit that feels the best to you.
MIDI is a fairly low level protocol (8bit) that can easily be handled by any contemporary system, no matter how you bring it in.
