Touchscreen mixing isn't going to save the world. You can't double-click, as far as I can tell, yet. And most engineers who've tried it prefer real faders.
However, scrolling through a project is easier, as is expanding/contracting your screen, and knobs should be easy even tho you don't have tactile feedback (important for faders but knobs, not so much). At this point, touch is more about navigation, and works well as another method of control w/ mouse (for delicate changes that might be fastest) and keyboard.
As we discover what works best touch will get better. Like double clicking - that should work if the screen is fastest enough, but how well that works without false opening is something that needs a lot of experimenting to make work right if it can. Mostly it involves writing the software to take advantage of the possiblities and feels natural. Like how Cake makes where you click on a track heightwise with the mouse now) perform different operations.
