i thought it was the other way around, is for me, it defaults to mercury, when i use a tungsten based user created theme and have to switch it back after each update. i have read they are fixing this issue (i think) then again i thought i read in the past that they had fixed it, but apparently they either didn't or the fix didn't fix it. annoying, but easily fixed with a few mouse clicks

themes are part of Lens'. make sure your not running a Lens or your Lens includes mercury as part of its setting.

does it for me every update lately, and i personally don't use lenses or screensets as such, and i believe users may have started seeing the issue pre lens introduction, could be wrong

An unwanted change of theme happened to me on my last installation too. And I have never used lenses.

Good thought but not part of Lens.....but a reminder that I had not even looked at Lens before.
