Understanding MIDI - Recording

How do you create/record MIDI data/sound?  I am reading S. Garrigus' book, the Manual and these threads, but either didn't comprehend this concept yet or missed it. 
 
And I haven't experimented beyond checking that the keyboard works and I can get sound.  Just got an Axiom-25 fired up via a USB direct to the laptop.  The Sonar TTS-1 synth is wild!
 
Let's add Sonar's electric piano to a project.  We have both a MIDI track and an audio track for the piano.  Playing the Axiom-25 keyboard produces sound - great.
 
Now, does the output from the piano's audio track have to go to 'another' audio track which is armed to record?  Or do I arm the MIDI track or...?

    This answer was in earlier post/response.  I missed it:

    Drawing the notes using the Staff or Piano Roll views is not a real-time recording thing.  Using MIDI drums or keyboards however, you arm the MIDI track (just like you do with audio) and record using the keyboard/electronic drums.

    Right. And if you want to render the synth track as audio, you can freeze the synth which temporarily renders the synth to audio, or bounce the audio to another track, which is a permanent audio track. You can then delete the synth and archive the original MIDI track, or to allow you to use the same synth for another sound.

    I'm heading toward using MIDI to create piano and fiddle runs or fills to add to the tracks I can record live, which are guitar and voice.  I can play keyboard, a little, violin not at all, and I don't own a bass guitar, but want those instruments in some of the stuff I write.
     
    I've read some threads about editing MIDI data in the Piano Roll view and so on, so I'll be exploring that next.
