Essentially they show up to 60dB of VU units and LUFS units which is an aggregated perception of volume. So if your recording averages around -10dBFS then the value for your project before you clip is 10dB.

The manual is well written though and explains things well. Essentially a loudness meter sets a new 0 point. This may be -20 for classical. The remainder is your crest level which acts as peak reference and average headroom in your mix. Because when various signal levels are combined they sum to an average level called RMS. Typing this on a phone by the way.

If you know this fair enough however just putting the information out there anyway. I use the k-12 scale generally speaking.
