audio/midi interface suggestions?

Hey guys. I'm new to recording and i need an interface that will allow me to make professional sounding recordings. At most, i will be recording three tracks of audio at the same time. If it doesn't sound "professional" then im basically scrwed. Low signal / noise ratio is a must as is the absence of that Casio-key-board sound. price cap is about $700. I've been looking at equipment for the past three weeks and have torn out at least a few handfulls of hair.
please please please help.

Thanks

Tell us what equipment you already have. Pre amps? Are you looking for PCI / Firewire / USB? I have used a delta 1010lt which was PCI and allowed up to 8 analog inputs. It's sound was professional (in my and other's opinions) Only two pre's though. I now have a firepod ($599 new) which is firewire and has 8 pre's. There are several other options... other's will have to comment on those.

ive read at least six topics but everyone wants a interface that can record like 8 parts at one time. and because someone said "The price for interfaces is driven by how many tracks in and/or out you want at the same time, and the quality for each of the tracks" in one of the other posts, I decided to make my own post for those who only need two or three INs at one time and top notch quality.

The DELTA66 may be a good bet then. I think it has 4 analog INS, MIDI, and SPDIF. It's PCI only.

    Greetings, fellow newbie!

These are the posts that were recommended to me, and they've helped a great deal:

    http://forum.cakewalk.com/tm.asp?m=461369&mpage=1&key=DSP񰨹

    http://forum.cakewalk.com/tm.asp?m=336679

And this is a thread I saw recently that was informative as well:

    http://forum.cakewalk.com/tm.asp?m=475679

Keep in mind that there is no "best" sounding card/interface. Alot of it is subjective and depends on the sound you want. I'm very inexperienced too, though I have atleast learned that sometimes it takes alot of trial and error to get the right sound for you.

I'll second that. You won't be dissapointed with the Delta 66.
It doesn't have preamps, but you dont' need them if you use the ones in that Mackie mixer you mentioned.
