  • How to cook hard-boiled eggs? Seriously. (p.3)

I found this page that might help you. How to cook eggs, from someone who might actually know.

That's exactly the site I used, but even leaving them in for 20 minutes the yolk was a little softer than I like (except the times it was fine -- don't know what I did differently).

@Steve - Hmm... a "headless" matchstick. Will any lil ol' piece o' wood do, I wonder? I have heard about the vinegar, though -- maybe I'll try that.

Thanks-

Simmer gently for 10 mins ( if its a larg egg give it a couple of extra mins) take the pan to the cold tap let cold water run in to the pan to let the eggs cool quickly and leave them in the cold water for 5 mins ( this keeps the joke nice and yellow )

I never gave it too much thought to be honest Susan - I do remember that she'd snap off the head and crack the match again before putting it in the pan.

It might be one of those self-fulfilling things - she never had an egg crack and she always put a broken match in the water! Just a coincidence

However, I just found this: http://www.barbecue-smoker-recipes.com/boil-an-egg.html but it clearly states to use the whole match as the phosphorus in the head does something. Sadly it's too long since I did Chemistry 'A' Level to offer any suggestion myself

Start in cold water, boil for 10 minutes, then, and most importantly, transfer then to cold water for at least another 10 minutes, makes sure the recepticle they are in is large enough or the eggs will reheat the water on their own. I make sure I do them in really good time (sometimes even the night before) and put them in the fridge still with the shells on. When you take them from the fridge the shells come off so easily you can do it with one hand !

Currently in process. I'm trying it with just one egg (in case it all goes horribly, horribly wrong) and a tiny bit of vinegar & salt.

I'll report the results.

He he - that generation was a bit shrewder than ours though Mark...

Knowing my Gran, she'd have used the match to light the stove first
