Which "famous" high end mic is the kit built to emulate?

None, it uses 1/2 of a 12AX7 tube and a 1" capsule.

According to the schematic it uses all the 12AX7 with both halves in parallel. This will reduce the current on each plate and thus reduce the noise. (Unless my newly acquired understanding of valves is wrong)

I take that back...  You're right, half if it is grounded.   Ignore the idiot girl that knows nothing about tubes.
