My wife also makes a wonderful fried rice dish and of course it's made to our taste with all the various s p i c e s (chili flakes, ginger, garlic etc....I'm not sure what else she puts in it, but a lot of what's already mentioned is in there). 
When she does make fried rice (couple of times a month) I do know that the type of rice she uses is excellent (Jasmine Rice).... this rice is light, fragrant, and flavourful......which is also part of our daily staple diet.

How did your fried rice turn out Bill?

Today I attempt FRIED RICE! The rice is made and now I will fry it!

I can do really good chinese food on a GRILL ... I can not do it on a pan or a wok ... and that goes back to my restaurant days, when we had grills ... and fried rice is easy when it's on the grill and you can make sure clearly that you get the correct/proper amount of crispiness that you want on it.
 
If I ever have a house ... it WILL have a grill .. a real one!

I tried grilling rice once, but they just kept falling between the bars into the flames...

Maybe I bought lemming rice?
