So here's TMI on chickens. Maybe within a few years I'll be an expert.
We just started raising chickens in my back yard. We have 8. Only one has started laying so far with the rest probably a month behind. The eggs are brown, and yeah, it really doesn't matter.
Expensive endeavor so far. The first egg was 1000 dollars.

This includes the feed and the cost of the hen house which I built from scratch. Hopefully within a few months I'll have some production happening and I'll be giving away eggs because we have too many.
Try to let them free range as much as possible, but we have a few dogs in the area and so we really need to watch them when they're out of the pen or they'll be dinner for a golden retriever.
