By "one man show" if you mean playing live, then I wouldn't mic the guitar due to feedback issues. You'll have your hands full with your vocal mic. This assumes your Taylor has a pickup. It also means your USB interface should have both XLR and 1/4" inputs.

Taylor 210 does have pick up so I will take the feed back advice!  I will look for "a USB audio interface that has high Z inputs" and "XLR and 1/4 inputs"   Late 2017 HP Spectre features 8th generation Intel Core i7 which I hope will handle it all.

HP - Spectre x360 2-in-1 15.6" 4K Ultra HD Touch-Screen Laptop - Intel Core i7 8th generation - 16GB Memory - 512GB {Edit: actually it was $1,199} ($1,299) at Best Buy during Black Friday grace period of a few days.  Since then was $1,499.  The Best Buy version did not include the Pen.
