One of my all time favs for acoustic guitar is Nickle Creeks "This Side".  A progressive Bluegrass band that Alison Krauss helped produce a song or two off this wonderful sounding album.  I know "Bluegrass" but give this album a listen its a fantastic album to hear and use for reference!

Depends what style of guitar playing you mean.  If it's fingerpicking, you should have a listen to "The Nine Maidens" by John Renbourn or disc 2 of Richard Thompson's "You, Me, Us?".

Superb clarity right across the guitar frequency spectrum.

I'll give them a listen. 
 
What about strumming stuff?  I was listening to the radio on the way into work this morning and was surprised at how good Greenday's acoustic strumming in "21 Guns" sounds.  Are there any acoustic strumming examples that you'd recommend?

Hmmm..... not as easy to suggest something there. Most of the acoustic guitarists I listen to are pickers.
