I suppose it's the result of a misspent youth listening to Rubber Soul.
I read the Beatles engineer Geoff Emerick's book, Here There and Everywhere and the thing I took away from it was how much they achieved with so little technology and so few tracks. Whenever I'm recording/mixing I try to keep everything to a bare minimum and take away rather than add.
