I saw (but lost the link to) a video where I guy was using Fractal's CabLab VST to run a cabinet simulator on a synth. I thought that was very interesting...

Audio FX chains can be created in any VST that has the capability. Amp Sims are common for having a truckload of FX under the hood so can make presets of pretty much anything.

Converse is also true to send a guitar track through synths that support audio in (i.e., can be inserted as an audio FX).

Kitchens are "non-guitar sources" I think... Not sure about cabinets per se but there's a plethora of Kitchen and room design options out there:
 
Lowes has a nifty design tool. Home Depot, Better Homes and others have similar options.
 

 
 
But anyway, I think many effect sims also have cabinet sims too.

I use them on EPs. But that's hardly radical, being not far from a guitar application. I can't imagine what benefit there'd be using one with a synth, unless that combination just by chance happened to accidentally result in some pleasant EQ. Which is really what a speaker sim mainly does - it's a complex filter.

yeah Bit that was exactly my take on it as well. I recall in the video is the guy just kept clicking through IRs until he had one that sounded good to him, and then mixed from there.

Vocals are good through amp aims too. Video killed the radio star springs to mind. Or even some none inch nails songs.
