Ingredients
Serves: 6 

  • 250g (9 oz) butter
  • 2 tablespoons Dijon mustard
  • juice of half a lemon
  • 2 cloves garlic, chopped
  • half a bunch fresh parsley, chopped
  • 1kg (2 lb) medium fresh prawns - shells removed with tails attached, and deveined

Method
Prep:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat oven to 230 C / Gas mark 8.
  2. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic and parsley. When the butter melts completely, remove from heat.
  3. Arrange prawns in a shallow baking dish. Pour the butter mixture over the prawns.
  4. Bake in preheated oven for 12 to 15 minutes or until the prawns are pink and opaque.

Actually you can do it on the skillet all the way, but you have to learn to adjust the fire, and then serve it on Rice Pilaf or equivalent ... Voila Shrimp Scampi!
 
Adjusting the fire can not be done as well with an electric range, and it needs to be done with a flame so you can bring it down enough to just let the shrimp simmer, which is what we usually do on dinner houses.
 
The baked procedure is the back up and is often used more for lobster and the larger shell fish.
