How do I enable the "hills and valleys" view of velocity/volume etc in my view of Clips...(I dont mean the single standard telegraph pole line..I get that) When editing say velocity i would like to see a more detailed picture in the Clip.  Anyone know how?

Velocity is part of the Note On message so there's only one per note; it's not technically a controller, but SONAR displays it that way for editing convenience and consistency. Proper controller messages are also discrete events; nothing is sent between the "telegraph poles".
 
You can, however, create MIDI automation envelopes that will send interpolated controller messages according to the envelope shapes between automation nodes. Here's a screenshot of a Re-recorded MIDI envelope which was then converted back to an envelope by the option in the clips menu. This is X3, but pre-X-series versions can do the same.
 

Thanks ..I realise now its not velocity ..it must be volume perhaps..but still not sure how its made graphic in clips view.

Some versions of SONAR have waveform preview. How to use it depends on the version of SONAR.

To convert MIDI controller messages to an automation envelope:
 
1. Select a clip containing controller messages (e.g. Volume = CC7)
2. Open the Clips dropdown in the Track View menu and choose Convert MIDI Controllers to Envelopes
3. Choose the controller type/number you want converted, and OK

And don't get Volume and Velocity mixed up. Volume maintains the timber of the sound while velocity can change the timber. As in a Piano being struck hard or soft has not only a louder volume, but a different sound, or timber. Use volume to make things louder  and velocity to emulate how hard an instrument is played.
