I do not freeze tracks until all done tracking and editing.
As far as why I choose separate audio and midi tracks, rather than simple instrument tracks, it is because I recall there being some issues (been so long I cannot recall) with simple instrument tracks, and I dimly have a blurry thought that there were also some limitations with simple instrument tracks, so I chose to just make a global decision to always use separate audio/midi tracks.
My decision to the manual track insertions and routing assignments is two-fold. First, the deliberation in doing that helps me keep everything organized, and it is pretty much autopilot for my brain to go through that set of steps, particularly with multi-timbral synths like Kontakt, where I will have maybe 7-8 loaded instruments in a single Kontakt instance. Secondly, I already do so many renames and alterations for the tracks, and each insert of a soft synth is potentially so different that by doing it all manually all the time, it keeps me from having to review the options every time I want to insert a synth.
It is PURELY a personal choice that makes sense to this old-fart brain of mine.

PAY ATTENTION after completing the download and running the installer, because the stuff from downloads.com ALWAYS tries to get you to install extra crap, so make sure there are no extra check boxes and also sometimes they just start up a separate install of some other toolbar junk - just pay attention and you can avoid all of that.
The plus side of using downloads.com is that despite the extra software junk you have to watch out for, ALL of the software they have available is CERTIFIED by them to be virus free.
