I just want to know if it's possible to change the language of Sonar without re-installing it : some kind of .xml file to move or something ?

Maybe not. When I installed X2a for the first time, I was asked what language I wanted to use DURING the installation, so I selected Japanese, then later discovered the program itself were shown in Japanese, which I didn't want. I contacted tech support and was told the only way to fix it is to re-install Sonar, which I did.

My guess for an .xml file worked with 8.5 : http://forum.cakewalk.com/FindPost/2034512 but seems not working with X series anymore.
 
Do you remember if you can uninstall only Sonar and let VST and VSTi in place ?

No, you'll have to completely uninstall, then do an advanced install, choosing just the plugins you want to see

Argh. I hope I will not loose my presets for plug-ins like Sonitus FX.

You can export your presets beforehand, like this...
 

 
and then import them after the re-install.
