Just a recommendation for the AcousticSamples B5, which I think sounds more purely tonefully good than the VB3, which I also have. Plus you get the bass pedals which by themselves can be a cool instrument.
 
The VB3 gets the nod in the leslie effects department however.

Tying out ni vintage organ and VB3. Both sounds great! NI one seems to have fixed rotor speeds which is a minus (unless I missed it). Acousticsamples will be next. Sure looks interesting :)

Vintage Organ and its predecessor B4 sound great, and they should because they're sampled so you're hearing the real thing in there. But because they're sampled they also fall short of the wide range of possibilities of a Hammond organ.
 
VB3, by contrast, is a wavetable synthesizer. Sounds are generated on the fly, so they don't have to be static. You can automate the things that organists tweak during a performance: Leslie speed, drawbars, percussion, vibrato and even amp distortion. Play the part on a light-touch synth keyboard and the result can be superb, indistinguishable from a real B3 performance.

Vintage organs is samples but you can still automate most, if not all of the parameters, most importantly the drawbars because you are mixing individual samples of each drawbar not playing a preset registration.

Fast/slow Leslie by default is assigned to the sustain pedal.

VB3's amp and Leslie simulation is way ahead of the generic Kontakt effects used by VO but VO does have the option of other amps and cabs. That said I prefer to run the Hammonds in VO with the effects off an use Melda's MVintageRotary.

+1 for the DB-33 Tonewheel Organ Simulator.  Came with my AIR instrument collection. Like the Velvet is to a Fender Rhodes, these organ sounds are realistic.
 
Never had the opportunity to play a real B3, or any of the other VST's mentioned here, but this thing sounds better than any organ samples I've ever heard in a synth.
 
DB-33 Tonewheel Organ is a virtual organ that recreates the sounds and controllability of classic tonewheel organs such as the Hammond B3, and the rotary-speaker cabinets they are often played through. It includes 122 preset sounds plus an extra-realistic convolution rotary cabinet and tube overdrive emulation. The rotary-speaker cabinet can also be used as an effect in its own right on an audio track.
 
Trial version available.
 
Edit: was curious to see if the installer loaded any factory sample content, like a few of the AIR products do. This one does not, in fact the installer is relatively small.  So if it's not modelling, it must be wavetable based.
 
There are other products from AIR that do not appear to be sample based, so this could be some combination of their tech.  These are Hybrid 3 (basic waveforms and wavetable), Loom (additive), and VacuumPro (virtual analog).

Arturia now have Hammond, Vox and Farafisa organs in their V collection. These area modeled but they have put a lot of effort into "non realistic" options arguably at the expense of getting the best authentic sound. There are some interesting modulation options on the Hammond that go way beyond the original instrument.

I particularly like their Farfisa where aftertouch controls the knee lever and the various effects produce some very nice sounds.

Not your definitive VSTi organs, but they are different.
