I usually insert a series of controller 7 with a starting and ending volume (like 127 to 0) over whatever period of time.  Some people would use controller 11.  Of course, for this to work right, you should put the initial volume value at the start of the track.

Not saying there is anything wrong whatsoever with your plan--just saying how I do it.

konradhs way sounds better than mine but I just bounce to track and fade that.

I just stick a volume envelope on the AUDIO track

Yes this... or if you're using multiple outs that go to a single drum bus, put the envelope on the drum bus.

In general, I mix with audio and not MIDI, but the question was about MIDI fade and there are times when it is helpful to have this in MIDI: especially when there is a large number of small movements, like swelling strings in and fading them out on many phrases.  Also, I can't get pedal steel right without a simulation of the volume pedal and I don't find the audio fader the right tool for that job.

So, overall mixing for me is audio but I use MIDI to mimic the instrument's behavior.

Yes, that's true too. I thought he was just fading out the end of the track though.

Scott, Cool that we are on the same page and you are right: the original question was about a song ending.  Sometimes these conversations bounce all around and I forget the original question.

Hey Konrad... definitely, when working with MIDI instruments (especially when orchestrating), using MIDI controllers (along with various articulations) are a must. Otherwise the performances don't sound real at all. It's a lot of work, but worth it to get something that most people can't tell whether it's live or samples.
