The word Alembic stems from a small village near Brussels, called Lembeek, where a very special kind of beer originated. This beer is called "Lambic" or "Alembic" as a reference to the village.
I live a few miles away, amidst numerous Lambic and Gueuze breweries, where fermentation comes through the air from the Brettanomyces bruxellensis, also known as the Brussels germ.
