To explain,
1left = 1
1right = 2
3 left = 3
3 right = 4 etc
1 stereo = 1 left & 2 right
3 stereo = 3 left & 4 right etc.

Sounds like it's just a naming convention thing, but something to also note is that some audio devices/interfaces lose a the ability to playback or record (typically the latter) all channels if the sampling rate is high, let's say like 96kHz.
