Was trying to mix some horns inside Kontakt to bounce to a stereo track when I realize that no matter what I set each instruments volume to inside Kontakt...as soon as I start playback all of the jump to a lower (default?) level.  I know this is some kind of midi thingy but I have no automation on the track at all.  Is there some switch in K5 I need to disable??

Before the notes start playing, set the CC value to what you want it set at for a starting point. With orchestral stuff, you should really be making it more dynamic than set at a single value anyway.

Easiest way to get around that is to right-click on the output for each instrument and select "Create Output". Reset the original volume fader to the default position, then open the "Outputs" pane and adjust the levels there.

I found this solution also...which works just dandy...by a little sleuthing.
 
Three things:

1) Do you have a volume envelope in the track?
2) Do you have "Zero Controllers When Play Stops" turned on? (Look under Options > Project... > MIDI Out > Other Options)
3) Pressing the Reset button on the SONAR transport can reset KONTAKT instrument volumes to MAX. As was suggested earlier, you need to turn off "Accept standard controllers for Volume and Pan" for each KONTAKT instrument. (In Kontakt 2: Wrench button > Instrument Options > Controller > Accept standard controllers for Volume and Pan check box << UNCHECK)
