All i mean is that if the response of a virtual fader is delayed, that is not a deal-breaker.   But when you are trying to record midi and there is a delay, a  good performance is virtually impossible.    Low latency monitoring of an input signal is where android's lmitation lies .  I recent;y got a Galaxy Tab 2 10". and although it's a an awesome tablet, it can't play a piano or drum app without a noticeable delay and it can't record a stereo input in it's 1/8" jack- just mono.  These are deal-breaking issues for audio and midi recording.  But John above put a link to an audio mixer/editor that looks really cool.   I'm looking forward to checking that out.

I use AC-7 Core as well as Splashtop Remote. Both work great. AC-7 is perfect for remote mixing and Splashtop is great for remote start / stop.  I use both all the time.  Oh yeah, both are for iPad.
