I go into the cakewalk sound center, choosing PIANO, Acoustic, Hall. When I press a key, it sounds like some type of accompaniment. But not a piano. When I select any other instrument and press a key, it still sounds the same... no difference between a guitar, piano, bass, etc. When I go to PRESETS in the sound center, it only lets me choose DEFAULT. My 'piano' appears as an option but won't let me choose it. Any ideas?

I'm not really familiar with Sound Center, but just to make sure I've got the story straight: You've created a MIDI track with Sound Center as the soft instrument and it's not making the right sounds? Just trying to figure out if the MIDI signals are going where you intended.

For the Cakewalk Sound Center to work for me (first time I have used it). I click on an instrument in the type column (left column), click on a subtype (center column) and double-click on a program (right column). That changes the "Default Program" to the program name that I double-clicked in the program column and plays that patch when I click on the keyboard.
