I thought I've read that you can't use the software on two machines simultaneously.  By upgrading to X2 on my main music production machine, can I put my existing X1 on my laptop?

Sure. But you coud have Sonar on 2 PC's at the same time. You just cant use the 2 PC's at the same exact time.
I think you miss-read the rules..

Someone may correct me if I'm wrong here:

I think the licence says that A SINGLE USER can't RUN Sonar on more than two machines AT THE TIME, and
two users can't use the same licence of Sonar on 2 computers,

I tried finding the EULA in X1 help .. it seems it's not there. I remember that you have to click those agreements above when installing Sonar. (I don'T feel like re-installing right now!! X1 is stable as it never been here ;)

Echo Clay's Comment.  Two installs are OK, you can just use one at a time.

Put X2 on your laptop and your desktop, but only run it one one at a time.

YES! if you have a license for both X1 and X2 you can use X1 on laptop and X2 on main machine.

From the license agreement on the install dialog box.

"one person use the enclosed Cakewalk software product (the "Product") on one personal computer at a time."

I think that is an incorrect interpretation. According to the license terms you would not be able to run both simultaneously unless they are independent full licenses... an upgrade is essentially the transferred rights from the prior license..so upgrading from X1 to X2 is one license, not two.

But who on earth would need to run two machines simultaneously?.. I have X1 on my laptop and studio and i use whichever is appropriate at the time.. when i upgrade to X2, it will be on both machines also.

In fact you can have SONAR installed on more than 2 computers as long as you don't use them at the same time.

To reiterate: an upgrade from X1 to X2 does not constitute a new licence. You still only have one licence.
Even though I have every version since Cakewalk 7 I still only have 1 licence.
