Very much appreciated guys.
Now I think I might be doing this backwards. When I hit the offset/envelope button it turns blue. It puts all faders to 0. But the volume envelopes don't change? I select all and pull down the fader and all faders come down.. go back to hit offset/envelope again, no changes to the envelopes?

Soooo does that mean I been mixing with it engaged? If so is that my issue why it didn't work?

Instead I just put envelopes on every track, select all, pulled down a envelope line on whatever track and they all came down.

Both got the same result. So I'm just curious if I've had it on the whole time on all my projects meaning the button is not blue when I set all my envelopes.

I use custom project templates, I'm wondering if this is where I messed up by having that engaged on every project. I thought off was when it was grey/transparent

No, the faders and envelopes DON'T change when you come out of Offset Mode. You just have to remember!

An easy way to tell if you are in that mode is the existence of little + signs nest to all the controls that can be altered using this function

Agreeing with Chuck, I avoid using Offset Mode, although I can see it as being useful. If the Offset Mode flag was a something more prominent than the little "+" sign, there would be less chance of using it accidentally. Also there needs to be some sort of indicator on each track that an offset has been applied. Otherwise you are just relying on your memory.

I've used offset mode on rare occasion, but always with great care and attention, Chucke's right, it has potential to make a mess. I've also found myself tweaking down the Gain knob (at the top of prochannel) on my Master Bus
. . . is that a no no ? . . . or just a cheap shortcut ?

Not necessarily cheap, but you run the risk of upsetting any dynamics plugs further down the chain, especially if you've spent time setting up thresholds, input gains etc. These will be affected by changes made via the Gain knob.

Thanks, good point Bristol_Jonesey . . . I knew there had to be a reason, never thought adjusting the Gain knob would affecting previously set up dynamics plugins settings, it does make sense.
I must have a closer look at Sonar's Offset Mode. For some reason I though it messed with the meter referencing, unity gain ? . . . not sure of the right terminology, but if you adjust Offset Mode too much, could it possibly have any other negative effects ?
