NI updates of late rarely include anything interesting, they just add support for a controller I don't have or something...but I update anyway because it makes me feel better...

 Every time I upgrade NI stuff I also have to use Windows Installer Cleanup since all of the updates fail installation.

True.  Kontakt 5.5 did include some features, but most of them, like this last one, seem to be mostly about support for things I don't have.
 
This set says it allows you to save presets from within the Komplete Kontrol software, but I thought you could already do that.

I'm guessing the core of Absynth was poorly designed if they have to overwrite so many files just to add one simple function.

It's not that, it's because the installer has so many big samples. The updater uninstalls everything, including all those samples. It's a poorly designed updater. The same is true for Reaktor - all those Kore KSD files get removed and re-applied and all the factory ensembles get removed and added again, even if unchanged.
 
I get the feeling that someone, long ago, made these installers using a MS wizard, and no one wants to dig in and change anything nowadays.
 
If you really wanted, you could probably just extract the DLL and VST modules using 7-zip and manually replace stuff - but that path is fraught with peril.
 
On the other hand, some of the preset formats may have changed due to improved support for the new keyboard and Maschine 2, but still the samples probably are unchanged since they were first made long ago.

 I think you could install Windows 8 quicker than that Abysmal upgrade.  They should ditch zipping them and go with the installer. Takes too long to unzip.

The Service Center does all this for you...just click download, and then  click "install".  Mine was quite worry free and 
quick...and I always save ZIP on my Storage drive so that if I need to reinstall, it's always there and I don't 
have to re-download.
