PEANUT BUTTER AND BEER SOUP (with yogurt)...
Need a normal crock pot since the soup will cook for several hours. This was made in haste like so much else in life. Thus requires little pre preparation. Just throw in the crock pot, off to work, and a 5 star feast awaits upon return.
In the crock pot, start with a 16 oz can of black beans and a 16 oz can of red beans. Would normally used blanched sprouted grains, but the precooked store variety will do in a pinch.
Add ¼ cup crunchy peanut butter. Not the fake Jiffy type, something like Adam's pure stuff.
Add ½ cup beer. Ideally, Pabst Blue Ribbon, but any respectable ale otherwise will do.
Add ¼ cup plain yogurt.
½ cup tomato paste, ¼ cup cashews, 4 tbsp virgin olive oil.
Add 4 cups of water and stir well as the crock pot is heating on hi.
Spices as follows. Measurements are level tsp, tbsp:
1 tsp packed grated fresh ginder
2 tsp honey
1 tsp raw cider vinegar
4 tsp salt (or to taste)
½ tsp cumin seed
pinch ground cinnamon
1 tsp curry powder
2 tsp basil
½ tsp generic hot sauce. (Or can use ½ tsp fresh ground black pepper)
Stir again until uniform. Then add vegetables:
3 cups frozen mixed vegetables
3 Roma tomatos diced
½ green pepper sliced in strips
½ medium red beet grated and about a half cup of finely chopped beet stems.
1 medium carrot grated
2 small potatoes unpeeled. Cut in half length wise and run thru a food processor to get potatoe chip pieces.
Stir everything up. Will take awhile for the peanut butter to diffuse.
Let cook on hi for many hours until done.
Another ancient, jealously guarded trade secret about these soups...
When done, you can optionally take about 3 cups of the soup (mostly the solid cooked vegetables). Run them thru a blender until smooth and add back into the base. Increases the thick consistency to get that boutique ambiance.
We generally can the soup, transferring while still scalding into half quart Mason jars. Let cool and refrigerate for future use anything not needed for the day..
