In the video tutorial, the presenter goes past my expertise with the phrase "OK, I've converted and assigned the clip".  How does one do that? The video is silent on that. When i do the rest, and drag the clip to Addictive Drums, I get a red waveform and no sound.

There may be new ways to do this now but I use Audio snap. 
Just read up on using Audio snap and you'll see it can turn a strong transient wave file into a midi note. It can only do one note however. So you need a tight recording of each drum part and convert them one track at a time to build a whole kit. Works fine on Snare and kick but gets weird with hi hats and ride cymbals.

I don't know what the video is that you are citing.
 
But if you create an empty MIDI track and then drag an audio file to it, Sonar will convert it to MIDI for you.
It works best on simple monophonic parts.

It depends on which version of SONAR you have, IIRC. Doesn't this require Melodyne Ara?

Yes, the drum replacer will create MIDI for the tracks defined in the drum replacer when the audio clip is dragged to a MIDI or instrument track.
 
A similar process happens without the drum replacer with X3 and newer with the Melodyne VST3 installed. The difference being, the entire clip will be used to create the MIDI data. The drum replacer will only create MIDI data for the tracks and notes defined in the drum replacer.
