These guys would give it two thumbs up each, but one blew his hand off in a sterno accident and the other one never really developed anything that actually looks like hands...

Yeah, I remember it pretty good Bill...
you were standin there by the creek sayin wah-wah , wah-wah...all upset and when others came down
by the creek to see what you was about they saw a hurd of turtles in that creek and it was you Bill that
said, that aint no turtles...those are ears!
The boys were floatin down that creek with bags full of crawfish and would have made off with em all

The Maillard Reaction

I worked with a Cajun down on Lake Okeechobee many years ago. He was a naturalist for the Audubon society and had grown up in his dad's hunt camp in Louisiana.

I was raised in and around the woods by my dad but I am still trying to figure out how he could recognize all the pertinent details of the critters we were observing. He could spot a bird, ID it and it's gender before I could see much at all... and when we pulled the boat up closer he was always correct.

I've never seen someone who had greater competency in their vocation. It was amazing, to me, to get to spend time with someone who was truly salt of the earth.

:-)

Good times.

Fun fact: cajuns owe their name to a province in Greece, not Canadjia as commonly believed.
