I'm looking for a really simple program to convert audio files into MP3 format.

If anyone has ever used the program 7-zip, you can simply right click on a zip file and extract it. I think it would be really cool if there was a program where you could simply right click on a file and select "convert to MP3".

Is there any kind of program like that? Or some other really simple MP3 converter?

There are many converters out there now, and decent audio apps (Nero, Pyro) all do conversions, Pyro (called Audio Creator now) lets you drag and drop a file to the interface.  However, mp3's usually get named, sometimes get artwork, so there has to be a little interaction.

This is my favorite>>> Wavepad

It's free, and you simply open the wave in it and click SAVE AS.... and it saves the file as an MP3 or one of several other formats. It remembers the last format and bit depth so once you save as MP3 320kbs it repeats it with a simple click from then on.

Is it possible to convert in the other direction?  I have mp3 tracks I'd like to working via Cakewalk, can pyro or Cakewalk convert them to be useable Cakewalk project files?

I use Goldwave which is a free audio editor for all conversion purposes.

You can import an mp3 file directly into SONAR, which will automatically convert it into a wave file. There are sometimes problems doing this with files sourced from iTunes, but standard MP3s (and WMA files) work fine.

+1 for Wavepad, a handy tool to have on hand. It also has a basic click 'n pop removal feature, a tone generator for making test tones,  plus your usual editing features and even VST support. Beware that the installer wants to install some other crap like a browser search bar. Just un-check all the options when you install Wavepad.
