I have in my VST soft synth a sax voice which responds to MIDI CC 27 (it controls the sax vibrato). So I would record it as in automation, moving some knob or slider while playing. Is it possible?

If you've got a keyboard or controller connected, you can record it from using the mod wheel.

If not, you can draw it in yourself in the PRV

I was able to record events by opening a MIDI CC 27 lane in PRV and drawing them (though it was quite tiring, it would be easier to move a slider!). However, I did not understand how I could record any CC (ie not usual Volume, Pan, etc) from an external keyboard. Is there within Sonar the possibility of redirecting, say, a received pitch wheel to any CC or other continuous message?

The only way I know is to change your recorded controller events in the Event List view.

I've just tried to move wheel events to a different CC number using Process > Find/Change (Interpolate in 8.5) but the replace options were all greyed out.

Maybe someone who is a bit more Midi savvy will chip in.

I have a master keyboard with assignable sliders in the my car box and an usual 61 keys GEM (or GeneralMusic, an Italian brand) at home  (not enough space ). The keyboard can send usual pitch wheel and modulation controls.
 
Probably in my previous post I wrote a silly thing: it should be impossible to transform a Wheel message (which has a range -8192 ... 8191) to a CC (which has 0 ... 127), but perhaps I can map a CC number to another
 
I read the documentation about StudioWare panels, but it seems they are no longer supported. Why? I think that having software-assignable sliders that send any MIDI data would solve every problem  .

Many Cakewalk programs have something called ACT which allows you to set up controllers to use in SONAR.
I've never used it, but search your Help file for ACT and see if you have it.
