There are a lot of misunderstandings going on here. I hope I can help some;
Create your first track, insert your Guitar Rig plug in and set up the correct input.
Now right click the track header (where it says the track name). You should see an option "clone track". Pay attention to the dialog. In your case you'll want to clone every property except for "events" which are basically the audio clips. You can also choose a number, so five for six tracks in total.

Now you have six tracks set up with the correct input and an individual instance of Guitar Rig. Now, ARM the track that you want to record to (the red round button on the track header) and make sure it's the only armed track.

That's all.

Put your GR plug-in on a bus and either set the outputs of the  6 gtr tracks to that bus or insert a send an each track that points to that bus if you want the dry signal to still go somewhere else. The inputs don't matter, it's only going to record onto the track that you have armed for recording.



I think Paulo's solution is excellent because it offers additional benefits. Not only can you try out different sounds easily on the different tracks, but if you want to "finalize" a particular sound, ctrl-drag Guitar Rig from the bus to the track FX bin. Now you can apply the effect to the track, freeze it, or leave GR in the track if you want to edit it further. And, the original setting is still in the bus GR if you want to make variations that are still somewhat similar to the other track.
 
Also, on a different subject, you may not need six tracks. I use multiband distortion a lot, it sounds huge but only requires one guitar part.

If you try exactly what I said and set up your first track with the input that you want to record, it'll work.

I am not sure I have a complete grasp of the issues, but when I saw the OP comments about needing to use a different input port on the interface, it made me think of the Input Echo On button - that was mentioned earlier, but I am not sure if the OP ever quite got the hang of that button.
 
To the OP - if you have a track with an instance of GR loaded, Input Echo On will let you listen to it while playing live, but you do not need/want it on when you are trying to record a different track that also has its own instance of GR loaded.  The first track will still be sending its captured audio through the GR and the preset for THAT track and THAT instance, which is exactly why you only want Input Echo On to be turned on for the track you are trying to record.
 
SO, create a track, load GR, select preset in GR, press Input Echo On, arm for record, and record.
 
Then turn Input Echo OFF for that track, set up a new track as defined above, and repeat for each desired new track.
 
At the end of it all, each track will be able to play back through its own instance of GR, and each track will sound with the preset that was loaded for that track only.

Input echo will go off automatically upon selecting a new track.

Thanks for all the help! I'm gonna try it all out and i'm pretty confident i'll get it working now. I'll try the different solutions people came up with.
