So, in order to bounce a Fantom track to an audio track I would select the midi track and the Fantom synth track and bounce to track.
Is that right?

Hi WSS, Adding to what's been said,
As far as I know, one can only bounce SOFTWARE VSTi's or SOFTWARE synthys that are mounted onto a sonar MIDI track.
So, for external hardware synths, the recorded MIDI track of sonar sends its data OUT via MIDI-out to the Hardware device, which plays it.
Then that played audio feeding into the PC via the audio-interface cable (or even via analog input) is recorded "simultaneously" by sonar onto an AUDIO track established for that.
"Simultaneously" means that if there is a noticeable delay between the MIDI track playing and the thus recorded audio, it can be taken care by an offset adjustment in one of the Sonar options.
