You do NOT have to change the midi controller channel to accomplish what you are trying to do - unless I need more coffee and misread your post.
I do this all day every day.
Assuming you have your instruments loaded up in channels 1, 2, 3, 4, and you have audio outputs set up using the Batch Function to clear the outputs and create new outputs for each loaded instrument, the rest is super easy.
You are only then missing some tweaks to the assignments in the Console View channel strips for each midi channel you wish to set up - I am assuming you will have 4 midi tracks setup, one for each loaded Kontakt instrument.
OK - so, for each midi track in the channel strip, set the Midi OUTPUT Channel (just below the FX Bin, to the midi channel associated to the instrument you want to trigger with that midi track. Do NOT change the midi input channel for that midi track - just leave it as omni/none.
When you set the desired midi track in focus, Sonar by default sets that midi track's Input Echo on, which will then connect the dots for you and you will hear the audio output from the corresponding loaded instrument in Kontakt. You can also manually set other Input Echo buttons on, for other midi tracks, if you want to hear more than one play simultaneously.
I hope I have explained things. It's harder to explain than it is to do, and you are close.
