Beans (legumes) are basically a no-no early on in the low carb.
The ONLY beans I really like are green beans (fortunately they are the lowest carbs of all the legumes). Gotta be frozen (or fresh).... none of that canned stuff for the Bapster.
Well the beans can be removed but it's not as hearty/filling.
Just thinly sliced fresh RED cabbage
Thinly sliced/diced carrots
Diced onions and smooshed/diced garlic
Soak it with red/balsamic/apple vinegar and sea salt/pepper to taste
Shake 'er up and let 'er sit for at least a few hours.
Of course this is supposed to have beans. I use canned mixed beans (kidney, black eye, chick, whatever but not green beans... fresh green beans/snow peas would make it nice too though).
Also apple cider vinegar (as well as the garlic) is supposedly good for clearing out artery crud. The apple cider doesn't taste QUITE as good as the red/balsamic vinegar but you can just use a touch of that to mask the slightly odd flavor combo the ACV creates.
You can also toss a bit of cold pressed extra virgin olive oil for a bit of nice salady lubricant without the nasty artery ramifications but it's expensive and I never do.
Some nice fresh spinach in all that works nicely too.
You'll stink to high heaven and poop like mighty Russian bull but it's a nice MANLY salad.
Almost like kimchee except I don't bury it in the yard and let it rot for a week or so. lol
